NOT feel, 2 long years of not eating Gilimanuk Betutu Chicken. In the middle of a Corona pandemic like now, I want to fly to Denpasar to get back to enjoying the deliciousness of this historically-laden chicken.
See the history, Previously, betutu chicken was only served during traditional ceremonies. The manufacturing process is not as fast as now. Before cooking, chicken must be coated with betel leaf and given husk coals. Then buried for 10 jam. This process replaces the function of the oven.
Now that process has been abandoned. Betutu chicken is a specialty of the Island of the Gods. There are several restaurants that offer this chicken. One of my favorites is Ayam Betutu Gilimanuk. Like a restaurant that offers traditional culinary, the exterior and interior looks simple.
However, about the deliciousness of the chicken, no doubt. Betutu Gilimanuk chicken cooked with lots of spices. Different from curry, turmeric for chicken betutu seasoning coarsely ground. The gravy is also not thick like a curry with coconut milk. The taste is even more special because it uses free-range chicken.
The deliciousness of Betutu Gilimanuk Chicken is felt to the inside of the meat because the spices are so pervasive. So that it can absorb, The marinating process takes a long time. After that, then the chicken is boiled.
Betutu chicken is usually eaten with gonde leaves and chili paste. Another alternative, with plecing kale sprinkled with peanuts and chili sauce. The typical Balinese sambal matah is, of course, different from most of the sambal matah in restaurants in Jakarta. Made from sliced red onions, garlic, will be, Cayenne pepper, and mix with eggs, lime and kletik oil. The use of lime is what distinguishes it from sambal matah which has been modified using lime.
Gilimanuk Betutu Chicken Restaurant does not only offer betutu chicken menus. They also offer Nasi Campur Bali Tempo Doeloe and satay lilit. The satay wrap is a customer's favorite so it usually runs out before the restaurant closes.
